Equally important is the way coffee is harvested. In Colombia, cherries are typically hand-picked, ensuring only fully ripe fruit is selected. This attention to timing plays a crucial role in maintaining consistency and quality from crop to crop.

Most Colombian coffees are also washed using a traditional wet-processing method. After harvesting, the pulp is removed and the beans are carefully cleaned before drying. This process highlights brightness and cleanliness in the cup, allowing the bean’s natural characteristics to take centre stage rather than being masked by processing flavours.
